If you didn’t know him, Javier’s enviable height and sturdy frame might look intimidating, but in actuality, Javier is a gentle giant with a gift for making anyone feel at home. The Puerto Rican native has been in Singapore for more than 10 years, and is somewhat of an F&B maestro: he’s the founder of the Kilo group of restaurants, Grain Traders, and, he hints, there’s more to come. “I’ve dreamed of working in F&B ever since I was just a kid,” he says. “I just like the sense of seeing how places come together, and how people really enjoy the food, place, and the experience.” Javier is involved in all aspects of his business, so being busy and hands-on is something he’s probably used to, and which will probably come in handy, in some way or another, once he embarks on his new journey in life: Javier’s just become a first-time father. Despite his ambitions and visions, though, he remains grounded by the smallest things. His favourite way to relax? “A good bottle of red wine and some steaks on the grill!” he laughs. “Generally, I like being surrounded by people whose company I enjoy.” We think everyone can attest to enjoying Javier’s company as well.
